Breakfast Recipe for Today: “Avocado Toast with Poached Egg and Cherry Tomatoes”
Ingredients:
- 2 slices of whole grain bread
- 1 ripe avocado
- 2 eggs
- 1/2 cup cherry tomatoes, halved
- Salt and pepper to taste
- Red pepper flakes (optional, for added spice)
- Fresh cilantro or parsley, chopped (for garnish)
Instructions:
Start by toasting the bread slices until they are golden brown and crispy.
While the bread is toasting, prepare the avocado by halving it and removing the pit. Scoop out the flesh into a small bowl and mash it with a fork until smooth. Season with salt and pepper to taste.
In a small saucepan, bring water to a gentle simmer. Crack one egg into a small bowl or ramekin. Using a spoon, create a gentle whirlpool in the simmering water, then carefully slide the egg into the center of the whirlpool. Poach the egg for about 3-4 minutes, until the white is set but the yolk is still runny. Repeat with the second egg.
While the eggs are poaching, spread the mashed avocado evenly onto the toasted bread slices.
Once the eggs are cooked to your liking, carefully remove them from the water using a slotted spoon and place them on top of the avocado toast.
Arrange the halved cherry tomatoes on top of the eggs.
Season the avocado toast with additional salt and pepper, and sprinkle with red pepper flakes if desired.
Garnish with chopped cilantro or parsley.
